Curry Turkey Wraps

Curry Turkey Wraps

Serves: Serves 4

Ingredients

  • ½ cup light mayonnaise
  • 2 teaspoons chopped fresh coriander
  • 2 teaspoons thinly sliced green onion
  • 1 ½ teaspoons SPLENDA® Granular
  • 1 teaspoon curry paste or powder
  • 1 teaspoon (5 mL) lemon juice
  • 1 avocado
  • 1 Granny Smith apple
  • 4 leaves cos lettuce
  • 335 g thinly sliced smoked turkey
  • 4 large flour tortillas

Method

Whisk together mayonnaise, coriander, onion, SPLENDA® Granular, curry paste and lemon juice; set aside.
Halve, pit and peel avocado then dice. Peel and finely dice apple. Fold into mayonnaise mixture.
Divide mayonnaise mixture, lettuce and turkey among tortillas. Tightly roll up; cut in half diagonally.
